Abby's Easy Taco Soup

Our daughter Abby loves to cook and this is the first dish that she has been able to cook all by herself.  Sunday, when I asked her what meal she wanted to help cook this week, this was her pick!  Here is our Super Bowl Sunday Supper, compliments of Abby Grace...

Start with 1 package of Genesis' Ground Beef
Add ~ Cumin, paprika, chili powder and black pepper to your liking, and brown until done.

About half way through browning, add ~ cilantro, diced onion, diced bell pepper (variety and quantity to your liking).  FYI... when Abby makes this dish all by herself these ingredients are left out and the soup is still delicious, but they are definitely a great addition.

We do not drain our cooked beef, it's lean so there is very little grease in your pot after browning... and we think it's full of mean flavor that way!  If you insist on draining your beef (or heaven forbid, rinsing your beef), you will need to add some additional seasonings to taste (from above) before adding the following ingredients.
* Here's a little health note for you rinsers.... grass fed beef has an optimal balance of omega 3 and 6 fatty acids, so unlike the industrial beef couterparts, the fat in our beef is actually good for you!

Add ~
1 can of organic diced tomatos, plus one can of water (we typically use Muir Garden Adobo Seasoned or Fire Roasted, no salt added preferably)
1 can of organic black beans, plus one can of water (or your favorite bean variety)
1/2 - 1 can of organic sweet corn depending on how corny you are!

Let the soup simmer for 15 minutes or so (the longer the better). 

Matthew and the kids love this with a little shredded cheese on top and tortilla chips for dipping.
My favorite finishing touch is adding diced avacado and a squeeze of lime!

Play with the recipe, make it your own.. it is a staple in our dinner rotation, especially when the weather is a little chilly.
